What are you canning now - 2009 edition!

Great idea on starting this thread Jenn...I made some salsa today

After bringing the mixture to a boil and simmering it for ten minutes I put it into my jars for waterbath processing....

It now looks like the mushy stuff you get in jars from the store. Can I just dice up my veggies and put them into jars WITHOUT cooking it for ten minutes first and then just process the jars in a waterbath? That way the veggies won't cook up to mush?? Does anyone know if this would be safe??
 
In a couple weeks I will be canning 50# worth of pickled beets and making my Mom's famous bread and butter pickles.

This afternoon, I will be checking out a friend's apple tree to make applesauce.
 
With all the rain my garden had a very late start

so I haven't canned a single veggie! On the brighter side, I finally broke my granny down for her coney sauce recipe. I canned 4 quarts for our chickenstock and also 3 vintage pint jars that I sent to a BYC member!
 
I have been working on beets, green beans, pickles, salsa, spaghetti sauce, refried beans and chicken stock. Some of my beets came out a little pink, I guess they bled out more than I had thought they would. I replanted for a fall crop so maybe I will get better color when I can those. But even the pink beets still taste awesome.

My pickles have my own home grown dill, garlic and peppers in them. Yummmy.

This year is my first attempt, at canning.. I've been freezing veggies, for several years.
After much research, I found that tomatoes were the only vegetable, which I am able to safely can, in a hot bath canner.
I put up 7 pints of whole crushed tomatoes, and 3 pints of sauce.
Here,in North Fla. between the Aug. heat and the stink bugs, I think my vines are on the way out.
It was a good start, although, for some reason, it was done, with much trepidation, which, generally, isn't my nature.
Hopefully, next year, I can purchase a quality pressure canner. They are few and far between, on Craigslist.

Royd I am in North FLorida as well. My garden didn't do to well this year either Did get some tomatoes but not enough to really can, made some pasta sauce, and pickles. I froze alot of squash and corn. Try looking in Walmart for a pressure canner. I got mine last year for 50.00 Its a fairly large one and I love it.
