What are you canning now?

Beekissed, how long do you boil the corn? Are those pints or quarts? I'm still at the HWB stage of my canning career, so I'm very interested in how you are canning your corn!

Should be boiled for 45 min. after you place the jars in the pan and return the water to a rolling boil. Then start your timer. Those are quarts but it works for pints all the same and I'd process for the same amount of time, just to keep things simple.
 
Three fat hens filled 7 qt jars, so that's the canning total for today...that and nothing else. We are winding down on canning now until the apples ripen, deer and the rest of the chickens are killed later on this fall. Feels good to be cleaning up most of the canning paraphernalia and getting that space back in the house. Shelves are full of food and life is good, so very good!

So far I've gained 138 qts. and 52 pts of food for the season, with many more to come before winter sets in. God has truly blessed us this year with a food bounty!

Ugh I'm scared to go out to the garden anymore lol, I dint come back for 2 hours and a 5 gallon bucket FULL...

So far on beans I've done 16 quarts dilly, 14 quarts 3 bean, frozen 4 gallons of green and 3 gallons and 6 quarts of yellow wax.... One gallon if string beans, I lose those to the dinner table...
I've given away 12 quarts fresh bring too pooped to pop any more beaaanns lol
I did 7 pints of peach jam and 8 pints of peach butter last night...was going to get started on tomatoes tonight but ran into a dilemma....


I BROKE MY STOVETOP!!!! ;(

Not broke, but I burned out a burner...and the guy at Sears was a real ummm. Lazy... Fellow.. He pretty much accused me of burning it out because of canning....

Naturally, I'm SURE he's in error lol... So I thought I'd ask my fellow canners... Have any if YOU burned up a stove canning? It's a Kenmore, grrr I NEED that big burner!!! :(

Not sure what "burned up" would mean in regards to a stove burner....aren't they supposed to burn up?

What's the exact diagnosis? Jets blocked? Not able to light it?

I wish I had something helpful to tell you. I know when my beloved's truck's wheels locked up while I was driving it, the auto repair guy told my beloved I must have been riding the brakes. My beloved straightened him out. And we found another auto repair guy. But appliances, I don't have many tricks up my sleeve for dealing with those guys.

I did actually get some canning done yesterday and today - for me, this is an accomplishment. It was facilitated by rearranging our dining area, actually. Long story. Anyway, I got a call the other day from a friend who had many too many tomatoes. Since I only know how to water bath can right now, tomatoes are one of the vegetables I can easily deal with. Got 17 and a half quarts of tomato sections, two quarts of sauce (thanks to my beloved cooking the sauce). May sound like piddly stuff, but for me, I feel like I have a small chest of gold sitting on the table here. We like to keep it really simple so we can vary the recipe at jar-opening time. And it requires a little less effort, time, and organization at canning time. I truly enjoy doing it, too. Some folks go to the movies. I can.

And this setup means I no longer have to rearrange and take over the kitchen when I want to can! And there's room for the dehydrator! And the grinder! Wooooot!!!!

I want to thank everyone for your posts here - I don't always have time to read them each in detail, but I am picking up a few pointers here and there. Great thread.

Well it comes on....kinda...its a glass top, first no-no the guy at Sears said...and I kinda admitted "I only have ONE stove, so its not like I had a choice NOT to can on it.." Lol that didn't help his pleasant demeanor :(

It won't get hot at all...and no pretty red light under the glass lol... I guess we get to pop the top and try to replace the burner....or I get a new stove... :D ...

I have 40# of peaches and 60# of tomatoes to do, so I guess I'm hauling out the turkey fryer lol...

Edit, oh its electric glass top...not by MY choice lol; it was a gift :)

Lol yeah...we are searching for a new appliance repairman as I type haha ;)

To boot, the guy could have SOLD me a new stove!!! Oh well, he was busy watching TV and I was thecrude one to have interrupted him :p

I love this thread too; I have found soooo many good tips and recipes! :)

You must have a HUGE pantry!
