What are you canning now?

Look at the canning shelf that DF built for me! Shelves are sized exactly for half-pints (2 high), pints (2 high), and quarts (1 high).

It's about 25" wide and 12" deep by 70" tall (or so).

He also built a narrow one, both of which will go in our utility porch and have latching doors on them - we're in earthquake country. The total capacity is over 400 jars. Now I can bring down all my jars from the attic and keep the empties in the same place as the "fulls".

I'm positive it is in there. Maybe I used a different edition. The one I used had pictures of jars in rows across and down on the front I stumbled on the recipe one day. It is under the the Apple Jelly or jam recipe. I think it was the third or fourth recipe down. I'm pretty sure it was called the Easy Apple Jelly recipe. Powedered pectin. Thanks.

Here it is:

Easy Apple

4 cups unsweetened bottled apple juice
1 package regular powdered fruit pectin
5 cups sugar

Prepare canner, jars and lids

In large, deep stainless steel saucepan, place apple juice. Whisk in pectin until dissolved. Bring to boil over high heat, stirring frequently. dd sugar all at once and return to full rolling boil; stirring constantly. Boil hard, stirring constantly, for 1 minute. Remove from heat and quickly skim off foam.

Quickly pour hot jelly into hot jars, leaving 1/4" head space. Usual wipe, lids, bands, tighten process.... Bring water to a boil and process for 10 minutes. Remover canner lid wait 5 minutes, then remove jars, cool and store.

Yes thank you. I couldn't remember the sugar to juice ratio. For my Bubble Gum jelly I use a half cup of fresh cherry juice (so 3 1/2 cups of apple juice), and about 1/2 teasp0on of bubble gum flavoring (to taste). The taste of bubble gum makes me gag, waaaayyy too much bubble gum tooth paste when I was a kid, but my kids love this jelly.

I still have to get pics of the wedding jam gifts. Been sooo busy.

His folks may not come after all. His dad was in the ER last night with severe abdominal pain and the doctors suspect colon cancer.

I'm so sad for DF. He's never been close to his father but still really wanted his dad to be there with us.
