What are you canning now?

Can anyone help me out? I have waded through page after page of this thread trying to find Scoop's Banana Jam recipe and have exhausted myself with the effort! LOL

If anyone has copied it, would you cut and paste it again?

I suppose I should have just PM'd scoop......

Banana Jam

Prep Time: 45 min
Total Time: 2 hr min
Makes: about 8 (1-cup) jars.

4 cups bananas
1/2 cup lemon juice
1 box Fruit Pectin
1/2 tsp. butter or margarine
6 cups sugar, measured into separate bowl

Prepare canner. Mash bananas and put them in a saucepot. Stir in lemon and pectin. Add butter, if desired (I do). Bring to a full rolling boil (and boy is that messy! LOL)
Stir in all sugar QUICKLY. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.
Ladle quickly into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. Water must cover jars by 1 to 2 inches; add boiling water if needed. Cover; bring water to gentle boil. Process 5 minutes. Cool.

I found this in an old post on here and ozark hen also has it on post 1957 I think that is the post number its on pg. 196

Today I canned 5 quarts of chicken soup,12 pints of seasoned ground beef,12 pints of salsa and 9 quarts of chili beans. Was really hoping to get to the green chile recipe that was posted but Im just flat tired. I guess it has to wait till next week
 
Good things being preserved in all of our kitchens.

Today, it's more tomatoes for me. I picked a bushel and there's at least that much more out there. I'm ready to be done canning tomatoes.
We picked 3 - 5 gal. pails of grapes yesterday so they are waiting to be done - hopefully this afternoon. The plan is to be finished with the tomatoes by then.

Can someone help me with grapes. Our grapes are ripe mid - August and have no seeds. The grapes we picked yesterday are just getting ripe and do have seeds. Would anyone have ideas as to what kind they are?

While I didn't can anything today, I did blanch and freeze 3 dozen ears of corn FOR THE CHICKENS this winter.

Is there really something wrong with me as my DH suggested? Poor chickies - they want something in the cold winter too, right?

Did anyone ever try this? I worry that the ears may be mushy and they won't eat them.

I have my mother save all the bacon fat and any food scraps, crackers, cereal that has gone stale, etc. etc. I then melt down the fat and add whatever I have which could also be corn on the cob. The chickens would LOVE some warm treats for the winter!!

tlhose chickens will eat anything. I hang cabbage in there for them during the winter. Marymac emailed me and told me she filled pint jars....I FILLED QUART SIZED JARS.

They look so good and I cannot wait to try them. I saw a recipe on line for them and it said to let them set at least three weeks...so we are waiting.
I did up a large bag of tomatoes Sunday after church and only ended up with four quarts and a small jar of tomatoes. so you poor women who are cleaning up bushel baskets

I wish I had a bunch of green beans to put up. I have about four small bags in the freezer. I put up all my canning supplies for the year.
