What are you canning now?

I went to Marc's and bought 5 bags of carrots, 3 lb each, for 1.19 a bag. Out of 15 pounds I ended up with 12 qts of canned carrots. I was surprised I got that many!! They'l be good this winter.

Apple Pie Filling

4 1/2 cups sugar
1 cup cornstartch
2 teaspoons ground cinnamon
1/4 teaspoon nutmeg [I use more]
1 teaspoon salt
3 Tablespoons lemon juice
2 o3 drops yellow food coloring [I don't use this]
5 1/2 to 6 pounds tart apples, peeled, cored, and sliced

In large saucepan blend first 5 ingredients. Stir in 10 cups of water; cook and stir till thickened and bubbly. Add lemon juice and food coloring. Pack apples into hot jars, leaving 1 inch headspace. Fill with hot syrup, leaving1/2 inch headspace. [Use spatula to help distribute syrup.] Adjust lids. Process in boiling water bath [pints] 15 minutes; [quarts] 20 minutes. Makes 6 quarts.

I'm also going to make some giardiniera this weekend. I've never tried it before but there's so much nice califlower in the stores right now I thought I'd give that a try.
 
Here's my first attempt at giardiniera (pickled cauliflower & vegies). I'll have to let it sit on the counter for a day and then refridgerate. I didn't water bath them because I just made enough to last a few weeks. Also, I think I may have cooked the veggies a minute too long as I wanted them alittle firmer. But - it's trial and error with these things!

Finishing the last bath for pepper relish right now. Will be a total of 12 half pints.

Depending on how many more jalapenos and habaneros come off before the freeze hits we may have to make another batch.
