What are you canning now?

Man it took me forever to make - but tried a new Chutney - called "Golden Gossip" made of carrot (we have some giant ones in the garden that are so sweet), onions, dried dates, apples, malt vinegar, red bell pepper and spices. Just a lot of shredding and chopping took about 4 hours. Made 11 1/2 pints and the house smells wonderful. A nice glass of wine tonight will be welcome!!

Hopefully tomorrow some more baking.

I made and canned pumpkin butter last year, and I am not dead from it. I haven't gotten sick from it either. Here is some info and I hope that this helps.
Pour mixture into hot, sterile, 6-ounce canning jars, leaving 1/2-inch headspace. Seal with sterile, 2-part lids and rings, as manufacturer directs, processing 10 minutes in boiling water bath. Cool; adjust seals.
 
Anyone here put up any Pickled Green Tomatoes? I have a recipe that calls for green tomatoes, celery, greenpeppers,onion, cauliflower & carrots. If anyone has canned any of this can you post a pic. and tell me what you use it for.

We have so many green tomatoes that I need to do something with. Something before they ruin. Thanks

YAY!! My friend gave me an early Christmas present yesterday: a 16 quart pressure canner. Here are the things I want to make first:

1. Spaghetti sauce with ground turkey
2. Baked beans
3. Chili

I have my Canning Bible and need to see if these are possible. Of course, there is a lot of applesauce in my future since I received an apple peeler corer on Saturday.

Anyone have a recipe of for salsa with pineapple? It's DH's favorite.
 
Do you mash them after you unscrew the jars? Are your pumpkins canned in water? Just curious, because I just canned some myself.
