What are you canning now?

Just put up 7 quarts of grape jelly (mostly in 1/2 pints with 3 pints.) I canned them last year, 2008, when I had so many grapes I didn't know what to do with them, but they didn't gel quite right. Sooo... I pulled them out of the pantry and had a 2nd try, this time WITH pectin. I really wish that some of these recipes would TELL you that it's easier to be traditional. Anyone, yummy jelly for the WHOLE WINTER!!!

I have also read that you should look up the ingredients and go with the one that requires the longest time to process. So when I canned chicken and veggies in the pressure canner I processed them for 90 minutes.....what my book says quarts of chicken needs at our altitude.

So, now I can open a couple of qts and heat them up and pour them over freshly cooked noodles or rice and instant soup.​
 
I just finished 16 pints of seasoned beef, 16 pints of carrots, and 15 pints of Tipsydog's Giardiniera. These will join the shelves of pears, peaches, and pickles already done. These will be so nice to open this winter for quick easy meals components. I improvised on the Giardi..., calling it veggie relish since I didn't follow a recipe, just used what I had, including various spices from the pantry. It all tastes good, and having done the seasoned beef, now I'm thinking of doing some quarts of stewing beef chunks in broth and stewed chicken in broth. Those will make marvelous quick soups and stews this winter. I also want to do some apple slices for winter pies and crumbles and cinnamon apple rings for "fancy." I can see that when my DH brought home my big pressure canner, he was really opening the door to canning addiction:) Actually, I've been pretty much shut in at home, care giving for my 91 year old mother who has bladder cancer and is under Hospice care. She came to join our household after hospitalization last January with the expectation of 3 months maximum survival possibilities, and she's still with us, weak but alert. The gardening and canning has occupied many of my stay-at-home hours productively and creatively. Somehow, I've not been able to concentrate on my sewing/quilting interests through her stay here, but the gardening and canning have filled the niche for now. ~G

Apple-Jalapeno Jam
4 cups of pealed, cored, and diced apples
1 cup of seeded, chopped jalapenos
1 cup apple cider vinegar
1 box of dry pectin (I actually used less than a whole box, because my apples seem to have a lot of natural pectin)
5 cups of sugar
1. Cook apples, jalapenos, vinegar until soft.For smoother jam (otherwise skip this step): place in blender puree and return to pot
2. Stir in pectin, boil for a min (that can't be stirred down)
3. Add all the sugar at once
4. boil for a min (that can't be stirred down)
5. skim foam and ladle in jars6. Water bath process 10 minMakes 6 half pints Serve with cream cheese and crackers, bagels etc...

I bought the ingredients to make Taco Sauce. I'm going to make Taco Seasoning and give a pint of sauce and a plastic container of seasoning to my family members for Christmas. Hoping to do this tomorrow and can the 6 pints.

Okay, I cannot think of anywhere else or any other group that I could share this story with and find appreciation. For four days, my last canning of ground beef, carrots, and veggie relish sat on the kitchen table, in the way at meal time and anytime I needed the table for another project. Problem? Out of storage shelf space-yikes! This simmered in the back of my mind until about noon today when I tore into the heart of the situation. To accomplish what I needed, I had to clean out the junk that had accumulated on the shelves in my storm room--now also my canning shelf room. I needed another shelf unit for the canned jars in there, so I had to clear off ALL the accumulated stuff on the shelf unit I was pirating from the mud room (storm room opens off the mud room.) To do any of this, I had to go into the adjoining garage and deal with three years of accumulated ????? filling the shelf units out there to find space for the mudroom stuff. Does anyone else here on this forum work like this? To get cleaned up, I first have to make an unbelievable mess! In the process, I filled three large trash cans with "stuff." I'm sure in this day and age I should have rehomed some things, but today was focused on "Get the Job Done!" Now, at the end of the day, my storm room shelves are reorganized, an additional shelf unit has been moved in, and the kitchen table is free for dinner time again with the canned jars neatly lining the shelves in the storm room. I now have empty space in the mudroom where I pirated the extra shelf unit for the canning jars. AND, my garage looks SO MUCH BETTER! All in all, a good day, but I'm pretty much pooped. My reward for all this was a chair side seat in the back yard watching our five new silkies on their first free range in their new home. I have much to be thankful for...Happy Thanksgiving to all of you:) ~G
