What are you canning now?

OH NO! My watermelon jelly didn't set... but when I ran a test on a spoon in the freezer it was starting to set just fine

So to re-can do I just need to heat to boiling, and add more pectin the second time???

Try letting it set for a couple of days and see if it will go on its own. Look at the directions that come inside the pectin box and they tell you how to re-do.

Well, I have to say Thank You to all of you who inspired me to become a "power canner."

I was really proud of myself last night. Got home from work at 5:30pm - set up and started Boysenberry jelly at 6:00pm and was completely done, cleaned up and 24 1/2 pints cooling by 7:30pm! Then on to dinner and watched some TV by 9:00pm. Slept really well too!

Have the same routine tonight since berries are coming on fast and then the orchard will start. Wish I had the time to stay home and do during the day - but guess I just have to make it work.

Saw a new recipe in my canning book for Raspberry Chipotle that I really want to try. Will have to squeeze it in somewhere.

I just found a new Farmer's market with ridiculous prices so I picked up some really cheap Asparagus and some equally cheap Strawberries to make jam with the last of my Rhubarb. That is what I 'll be canning after a quick trip to the feed store. My wife go me a pressure canner for fathers day so I gotta check it out.
