What are you canning now?

HELP! 10 days ago I made a batch of strawberry jam. One batch didn't set up, but I waited, hoping it would. I just checked and it still hasn't set up. What can I do? Open up all the cans and re-boil? I made it with strawberrys and sugar - nothing else. Can I add pectin at this point? How much would I need? I've never used the stuff before - all the other cans set up fine without it.

You do really have strawberry syrup, but you can open all those jars and add a box of pectin, bring to a full rolling boil and then reseal, waterbath it, and call it done.

Here's a recipe the Extension offices handout. I used it once on a batch of Mulberry Jelly, worked like a charm.

To remake with powdered pectin:

For each quart of jelly, mix 1/4 cup sugar, 1/2 cup
water, 2 tablespoons bottled lemon juice, and 4
teaspoons powdered pectin. Bring to boil while
stirring. Add jelly and bring to a rolling boil over
high heat, stirring constantly. Boil hard 1/2 minute.
Remove from heat, quickly skim foam off jelly,
and fill sterile jars, leaving 1/4-inch headspace.
Adjust new lids and process as half-pints or pints
for 10 minutes in a boiling-water canner.

For the dried red pepper flakes, do I dry the peppers then crush or dry after crushing?

Dry them first. I usually spread them out as a single layer on a screen or piece of cardboard. You can also string them with a needle/thread - looks nice hanging, takes less spaces, but quite a bit more trouble. I only string the ones I want to sell or give as gifts. You could use a dehydrator, but they'll loose some potency during dehydrating.

I found this at Goodwill today for only $5!! It has five trays and even came with the instruction book.

We are picking white pickles galore and will be canning them tomorrow, also went out back in the horse pasture and found wild blackberries to pick. What a great day.

Taking a bit of a vacation from work over the next week. Apricots are going to be ready in s couple of more days. Had to cover the trees since the birds were starting to peck at them. Also, want to finish up my new art studio.

Well, have to go and let the chickens out are since they don't care of I'm on vacation they just want their morning treats!
