What are you canning now?

I need help with foaming on my jams.
I do not use the butter. Is there any other way to help with foaming? I skim and skim but some always makes it into the jars. If they seal are the jars okay to use? Other than looks are they safe?
I made some strawberry banana jam today and at the tops of the jars you can see bubbles/foam.
Ideas? What do you all do?

I know I used to not care... it really only effects the looks, not the taste. You can skim it off as you have... or just leave it on. I think Jen leaves it.
 
Was there a recipe posting for a Sundae Topping or a jam that was a sundae in a jar??I seem to remember something to that effect.I have been going back looking for it but I can't find it.Is there a place where the canning recipes are kept?
 
I also use butter in jams/jellies to reduce foaming. I find there's never any foam in jams that way, and only a very tiny amount in jellies. Also, if you go ahead and fill the jars, any foam will come to the top. Give it just a munute, run a fork around the top of the jelly and the foam will lift right out in a clump.

I did 11 pints Chow Chow yesterday. Have juice ready to make Crabapple Jelly and Peach Jelly this afternoon. Off to a farmers market first though, will spend the morning there.

Teresa put up 12 1/2-pints of fig preserves yesterday. One of my co-workers gave us a large basket of mission figs on Tuesday because he didn't know what to do with them and he knows that Teresa cans this time of the year. I'll take him in a couple of pints to show him what you can do with them. He's a yankee boy who just moved down from NYC to NC and bought a house in the country. Apparently he has a couple of fig trees (or bushes) and some apples and peaches as well. So, in about 30 minutes I'll have some on one or maybe two of her southern biscuits with a little butter.

) from yesterday. Have one last little batch of grape jelly to do then onto grape juice and either peach butter or spiced peach jam??

I just tried one of my "claussen" pickles that I made last week and they are very good. DH gave his approval stamp, so I'll be makiing as many as I can and checking the garden for more pickles. That's a good recipe and they are REALLY crispy!
