What are you canning now?

I'm in Altmar...near Pulaski area. It's zone 4

I moved here 4 yrs ago from zone 5. I used to think that was a short growing season!
I just planted these canes this spring. Bought them from someone on BYC. They're doing great! But just starting to give me enough berries at once (over a few days) to jam with. I still have rhubarb too, so apple rhubarb jam is next:)

My tomatoes have flopped for the 2nd yr in a row:(

I think the other reason might be that even good wild mushroom can be cross pollinated with the spores of poisonous mushrooms. My mom eat some wild mushrooms picked by someone who knew good from bad and they got really sick and had to go the hospital - 911. They concluded that they were close to some bad ones and they got some bad spores. Very scary to think my parents could have died.

I also looked at the Ball book last night and it also said not to can in jars larger than a pint. It also said to discard the cooking liquid. With all this said I still want to can some up for the winter.

I havent read anything that said that would happen! Mushrooms are pollinated by the wind....hmmm.
What might have happened-it happened in my family-is if you are picking Honey Mushrooms there is a look alike that grows in the same proximity and it's mildly poisonous. My brother got the luck to eat that one. (my Dad picks those...for this reason I dont!)
Intereating about the mushroom broth-I wonder why that is? Also, what about the Origional poster that said she canned up a bunch of it to use in soups etc? I guess mushrooms are a funny thing to deal with! Terri O**who looked for store mushrooms to can today--no luck**

I read on the internet the reason not to use the original broth is because it makes your mushrooms look really dark. I don't care if they do look dark myself. I did can some of the broth in quarts to make soup and gravy with. I don't see why you couldn't can it. I pressure canned it for 60 minutes plus if you were cooking mushrooms to make soup with wouldn't you just go ahead and use the broth to make your soup? You wouldn't drain all the broth out and put fresh in would you? I wouldn't think so anyway. Like I said I have never canned it before but I have canned my mushrooms in the original broth like this for years and they have been fine.

I'm in more or less zone three. Up past Watertown outside of Ogdensburg! I know right where you are. Good onion farms down that way too... not to mention the fruit in mexico

I grew up surrounded by the onion mucklands in Scriba:) zone 4 and full of rocks. Then we moved north east to Albion/Altmar in the woods and zone 4 with very sandy loose soil. Not to mention even more lake effect snow. This year I have been canning like my life depends on it. I wonder if it's mother nature telling me to get ready for a bad winter. A few yrs ago we had 11 feet of snowfall in February alone. Hehehe I love NY. and jam....

I have to thank all of you on this thread. After following this for awhile, I thought canning would be kind of neat and last Christmas I decided to ask for a canner. My salsa got first place at the Comal County Fair! Now if I could just get DH to eat the canned stuff, he swears I'm going to give him botulism.
