What are you canning now?

There are pressure cookers, and then there are pressure canners which can double as pressure cookers.

Canners are the larger vessels, with a weighted guage or dial gauge, and specifically designed for canning. They hold jars at specific heat/temp combinations that are gauged and therefore process the canned foods at required levels. You can also pressure cook foods in them.

There are also many smaller pressure cooker models on the market. They're designed only for cooking foods....the type of recipes/foods you could roast or stew for hours. But by pressure cooking you get the same tender, juicy results without the wait-time. A pressure cooker is not not suitable for canning.
 
according to this article, a pressure canner is a pressure cooker that is bigger and has a pressure gauge not just a pressure valve. You can use a pressure canner to cook but not vice versa because you need that gauge to tell how much pressure yo're using.

So I want to treat myself to a new canning book which 2

would you recommend...here are some that I am interested in. I already have the Ball home preserving and The Joy of Jams...On top of that are there any CSA cookbooks anyone would recommend?

I'm not sure I'd want to cook anything in my pressure canner.

It's not the most appetizing looking pot in my kitchen. Please tell me the discoloration is normal. We do have hard water, well water. So maybe that makes a difference? It's a presto.
