What are you canning now?

Last summer was my first year canning, Dh and I learned off the computer... we canned green beans, tomatoes, pickles, salsa, jam. This year we are doing alot more, already got the garden planned out and ordering seeds.

I started to organize my empties last night and will do the same with the filled jars in the coming days.

But that's just because we're remodeling the room where I keep all my filled jars, and I have to figure out where to put them in the meantime!

Looking forward to canning again. My friends are starting to get curious and are talking about doing a canning party with me. It'll be nice to have the company (if they follow through) b/c canning can get lonely!
 
Jenn that is wonderful idea about having friends over to help can. I had my daughter over but she although she did help peel all the apples for me she just watched t.v. when it came time to make the applesauce

I would love to learn from someone on how to make jellies and all the stuff you make but I guess I will risk it and try it on my own.

Making jellies does take some practice as all the ingredients need to be measured precisely. If you can 'can' Ozark hen, I have no doubt that you can make wonderful jellies and jam!

Last night DBF and I moved all my canning out of the utility room into the kitchen because of some remodeling we have to do (don't ask... it has to do with not having had heat at our house in 5 weeks!).

I was surprised both at how much I had left and how much we'd eaten. I have 3 shelves filled with jars 3 deep and 2 high.

Today I have been canning more Chili Sauce and I am now on my 2nd canner full. This stuff is so yummy. I know no one has asked for this but here is how I make this simple, yet yummy chili sauce.

All I use is about 7 lbs. of ground beef
4 jars of the store brand Chili sauce (found where the A-1 is kept)
And 2 to 3 packs of Chili Seasoning (to taste)

Then I cook the meat first and drain really good, then I add the sauce and stir, stir, stir, and then the seasoning and again stir, stir, stir, then I spoon the mixture into hot jars and put on the lid & band and process in pressure canner for 90 minutes at 10 lbs pressure.

Hey Acre, what do you use that Chili sauce for? That sounds like something my kids would love.
I've been canning more spaghetti sauce and I'm running low on my cream of chicken soup so I'll need to can some more of that this weekend.
 
You ladies are getting me in the mood to start canning too. I've got some cherries in the freezer for jam and habanero and cranberries for more of that hot jelly we love.

Got a cow being butchered soon so that is 20# of beef to can. Better get my stuff geared up again, huh?
