What are you canning now?

5 quarts 'strawberries in syrup' The grocery store had a sale, 99 cents for a pound box of strawberries. I may go back and get more, this was only 6 boxes and way easy to do.
 
Mmmm... strawberry syrup!? I am so all over that.....

I'd like that one too! Strawberries are just now hitting the farm stands. They're too ripe to ship, so we have to process them right away, but they're soooo good.
 
Well..... it's in the Ball complete book, page 153.
Basically, 16 cups strawberries (it calls for whole, solid berries but I'm slicing them up since about 3/4 are hollow) and 2 to 3 cups sugar. You coat the strawberries in the sugar, allow to sit for 5 or 6 hours, then heat up to dissolve sugar, pack with 1/2" head space and water bath at 10 minutes on pints, 15 on quarts.

I picked up another 8 pounds today, just finished slicing them up.

I got 4 pints of strawberries fresh from the farm. I probably have about 20 pints in my garden... but not so yummy when they are still GREEN.

I sliced this batch up a but different and ended up with 4 quarts, 1 pint. And 2 half pints strawberry syrup.

It's official. I have movers coming to pack me in 13 days (OMG the nightmare relocation has finally come to an end!). This is my last canning post/job until I get unloaded and unpacked, probably in June. I'm putting it away...... now to ready myself for the withdrawal symptoms.

Does anyone know where to get Pectin in bulk? I have a source for sure-jell (my friend works at the food plant that makes it, so when they are done testing a batch they throw it away or can take it home. She hooks me up

But it's a citrus pectin?

I don't know....Vfem do you have a resource? You can't tell me you buy those little ball packages of rediculously expensive pectin!! You can too much!! lol.
