I too would love to can some green beans this year. We planted Kentucky Wonder and they are coming up like crazy. We are in time-zone 7... it's hard to imagine already having a crop ready! Ours should be ready around the first of July.

I want to make spicy green beans, regular green beans and the beans with onions sounds fantastic too!
 
I fought off the mosquitos tonight long enough to pick enough honeysuckle to make some jelly. I put the flowers in a plastic white bucket and set it on the counter. About 5 minutes later I came back to find teeny tiny little bugs crawling around the inside of the container. I put some plastic wrap over it and set it in the fridge until I get an answer on this but I have PLENTY of honeysuckle so I can go get some more if it takes too long. Should I rinse the flowers before I put the hot water on them or will that cause them to loose the flavor. Also, is this a tightly packed 2 cups of flowers per 4 cups of water? I have the recipe printed, I just like to know all the details

Here are some recipes I use from an Amish canning book I have.


Apple pie filling
6 lbs. tart apples
4 1/2 cups sugar
1 cup corn starch
2 tsp. cinnamon
1/4 tsp ground nutmeg
3Tbs.Lemon juice

Blend together sugar cornstarch spices and tsp. salt.stir in 10 cups water.
Cook and stir untill bubbly. Add lemon juice .Add apples and put into hot jars leaving 1/2 inch head spce.Seal process in boiling water bath for 20 minutes.Makes 6 quarts.

Blueberry pie filling
3qts blueberries
1-2 Tbs. clear jell
3 c. sugar 1 qt. water
In a large saucepan bring sugar water and berrries to a boil.mix clear jell with about 1 cup of water in a bowl.
Dissolve well and add to boiling blueberry mixture.When thickened spoon into clean jars .Seal and process at 5 lbs. pressure for 5 min. If no pressure cooker i available,process in hot water bath for 15-20 min
Makes 8 pints.

I use this for Blackberry also.
