For the chicken broth-

Made it in my water bath---it takes a large POT!

7 Chicken backs along with some extra skin
3 onions
1 bag of whole carrots
water to cover
salt- I didn't measure it and I used canning salt
pepper and a few other spices

Simmer everything in a LARGE POT for 8-10 hours remove all the veggies and chicken from the broth. Put broth in jars and process at 10lbs pressure for 25 minutes for quarts or 20 minutes for pints.

The recipe also said to use celery-but I didn't have any celery

Use canning salt

Canning salt and kosher salt with non of the anti-clumping stuff is what you need. So just check the package before adding it.

Here are some recipes I use from an Amish canning book I have.


Apple pie filling
6 lbs. tart apples
4 1/2 cups sugar
1 cup corn starch
2 tsp. cinnamon
1/4 tsp ground nutmeg
3Tbs.Lemon juice

Blend together sugar cornstarch spices and tsp. salt.stir in 10 cups water.
Cook and stir untill bubbly. Add lemon juice .Add apples and put into hot jars leaving 1/2 inch head spce.Seal process in boiling water bath for 20 minutes.Makes 6 quarts.

Blueberry pie filling
3qts blueberries
1-2 Tbs. clear jell
3 c. sugar 1 qt. water
In a large saucepan bring sugar water and berrries to a boil.mix clear jell with about 1 cup of water in a bowl.
Dissolve well and add to boiling blueberry mixture.When thickened spoon into clean jars .Seal and process at 5 lbs. pressure for 5 min. If no pressure cooker i available,process in hot water bath for 15-20 min
Makes 8 pints.

I use this for Blackberry also.

I've got 4 pints of blueberries. I may just freeze one for a mixed fruit jam later... thank you so much for these idea's! I want to try the apple as well....mmmmm

I'd like to know if I need to rinse them as well. I'm filling a jar with violets, the lilacs are about to bloom, and I need to know what to do.
