What are you canning now?

low salt, low acid, low sugar all need pressure canning. Green beans, greens, squash, ect. they need to be pressure canned. The salt, sugar, and acid keeps bacteria from growing under low oxygen conditions. The bacteria that grow under low oxygen conditions are very dangerous. The high pressure heat kills anything that could cause problems.
 
Thank you! I guess I need to get the book first and see what all I would need it for and then go from there. I know I want to do beans because we all love them. Oh this is going to be such an adventure already I can see!! I am excited. I might have to go to the Farmer's market to get me some veggies to try first until mine get growing!!
 
I have one of those already! It's been sitting for 15 years but it's still there. So what your telling me is I need to quit procrastinating and just get the pressure canner already!!!! Okay okay I will do it!!
 
LOL yes; just get the canner, the book, that extra rack (so you can put more than 6 jars in)

and if you DONT have the canners equipment the canners essential kit at walmart; has jar grabber, the lid grabber, a funnel and the head spacer...

really thats all I ever use...
