What are you canning now?

There have been untold millions of pounds of green beans canned in a water bath canner. I've eaten a train car load of them myself in my 50 years that my grandmother and mother canned.

That said, I use a pressure canner for my beans and that's what I would recommend to anybody.
No need to fear the pressure canner. The worst thing that could happen is, well, you could kill yourself, but the same is true of driving a car. Or getting out of bed in the morning.

I just got one last year and I LOVE it! No more lids sticking together! My lids always stick and then I get hot water all over me when I pry them apart. Plus no risks in messing up the rubber seal with this!
 
wow; never seen those before..

I usually dont have an issue w/them sticking together..but I could see where it could be helpful for the seal part of it..
 
Last weekend was my first attempt at canning.

The green beans came out beautiful, but I am having issues with the summer squash.
The green beans were in Qiart jars and the squash was in pint jars.

PROBLEM: LIQUID IS BOILING OUT OF JARS. .. . AND my jars only look half full.

So, I thought that the problem was the jar was too full with liquid or food.
I packed the jars firmly using a raw pack for the first batch. I thought that perhaps the problem was caused by
the softening of the squash as ist cooked. The second batch I did as a hot pack to try to avoid later shrinkage of the squash.


These were small batches - - the first had 4 pint jars and the 2nd batch had only 2 pint jars.
They weren't done on the same day incase you were wondering why I didn't cook them all together.

Any idea what I am doing wrong ? ? ?

Do any of you buy your canning lids in bulk? On saturday I bought my first bulk roll of lids-these are generic lids, but they are sealing well so far. I couldn't believe the price this year on the little boxes at WalMart! geesh! almost $3 a dozen!

The lids I bought were sold by weight- I got 28 1/2 dozen for $33.94 which averages $1.19 a dozen. Now to figure out where to store them...

I am in the process of turning my storage room into a pantry...
 
Got a serious deal on raspberries so Im going to be doing raspberry jam over the holiday weekend.
For Barefootmom... who bought bulk lids where did you go to get them?
