A couple of reasons why it may have done that: If the berries and rhubarb didn't get crushed enough it can cause floating. The other thing is if you used store bought berries or farmers market berries that were beginning to get a bit dehydrated that can happen. They look all nice and yummy, but they have been held over and so some of the moisture has diminished. Store berries dry out during shipping and storage and when you go to make jam with them, they are less dense than the syrup you have mixed them with and so they can separate. You can cook store bought an extra minute or so and that may help keep them from floating. Hope this helps! You can also check out pick you own. This is a website with lots of helpful canning information and recipes.

are you using the NO SUGAR ADDED/NEEDED pectin??

I use the no sugar added pectin for our jams, but not the syrups. Hmmm...you just gave me an idea...lol I wonder if I could use the no sugar needed pectin, but increase the recipe so that it was thick but not set. Eureka, Momagain! You may have just found my answer..

AWESOME! I just starting bringing in white cukes this week too! I have my own dill & garlic as well. The vines just started going nuts, I think by next week I'm going to have dz of jars filled. (Or at least I hope! HAHAHA)

My cucumber plants are still itty bitty sprouts here. Same with my zucchini. My hubby is just about frothing at the mouth over the thought of pickles...

I have never grown white cucumbers...how different are they from regular ones?

What kind of canner is it? Most will hold more than that. Because I have an All American and it is only 15 quarts and it holds 7quarts or 10 pints and I would consider it really small, wish I had gotten a larger one.

First...CONGRATS! You will LOVE it.

Second...How many quarts does it say it will hold? Lots of the new ones that are digital and such that I have looked at are around 6 quarts, but don't actually hold 6 quart jars, only pints and half-pints. Can you post what brand/type/etc and I will look it up?
