What are you canning now?

About the strawberry jam....... If you arent set on putting it in jars, you should try freezer jam. Thats what I make and it is really good.
I use the liquid pectin and follow the directions in the box. yummy and super simple

I did make freezer type many years ago and it was sooo good but I want to put it into jars and waterbath this time. Anyone???
 
Can anyone tell me how you can chicken? Do you typically can older chickens? Do they taste like the chicken you buy in cans at the store or do they taste like fresh chicken? What kinds of recipes do you use your canned chicken in?

In know there are lots of questions but I have just never heard of canning chicken. Thanks in advance!

32 pints catfood, 3 pints broth, and 28 quarts of boiled peanuts!

From a 25# box of raw in-shell peanuts from Bertie County Peanuts, I got 47 jars total. It cost me $33 for the peanuts and $11 for shipping. Good deal for me, up here in New England. I'll be canning 2-3 boxes next fall, for sure!
 
Is everyone ready for canning season?

Are the seals sealing properly in your pressure canners? PLEASE make sure they are, this is vital to your health.

Do you have your jars yet?

Do you have your lids yet?

How about the bands?

How about that trusty jar lifter that is a God-send?

Do you have all your salts and seasonings you'll be using?


This is just a short checklist. If you don't have all you need yet, you need to get it ASAP. More and more people are preserving this year so all the above listed items are moving off the store shelves fast.

Mom is giving me a bunch of her jars. She already gave some quart jars to her neighbors, but says she has more that I can have. Also, I get her smaller pressure cooker

This will be my first year to can things that require a pressure cooker...

The best! I love them! I will often have a quart for lunch. Great on a hot day when I am sweating outside in the garden and craving salt!
