What are you canning now?

Good Morning All!

Ozark Hen, did you put any persimmons up last year? (I think it was you asking about it) In my neck of the woods the silly things really never fell off the tree. The deer and I were both looking up and scratching our heads. I put a couple of bags in the freezer but havent made pudding with them yet. My dad loves this, its his moms recipe. He is in Florida and wont be home until May. Gotta wait till then.

Happy Happy! spring is here! Henry Fields sent my fruit trees Friday and I am happily awaiting the Strawberries. Maybe they will come before it rains today. Then those will be planted. WOOHOO!
Now need to figure out how to keep the chickens out!

Well I am, nuts about persimmon pudding. In NC they sell for $5 a pintof prepared persimmons (squished up for pudding). How much do they sell for in Illinois?
 
Oh my gosh! I have never seen pre smashed persimmons in any store. Or even at a flea market, rumage sale, bake sale or or or anywhere! haha! We have to go pick the up and smash them ourselves. But that heavenly flavor is so worth it. Its like already flavored pumpkin, maybe. only better! When my two bags are gone, Im gonna be sad. I would for sure pay 5 bucks for more. Love Love Love the stuff:)

This is my first time ever making maple syrup. We have two HUMONGOUS
maple trees in our front yard, which are at least 150 years old, of which we put two taps in each. I have boiled down over 100 gallons of sap (so far) over the last two weeks. We have canned just under 3 gallons of finished syrup. This will be sent all over the USA as a belated Christmas presents (Easter presents now!). Our family had decided not to exchange gifts this year because most of my family got hit so hard by the recession. I am so great full to be able to send the gifts AND SO SICK OF BOILING SAP!

Looking for a canning recipe for cherries. My DH's neice has 4 cherry trees and they said we could come pick as many as we wanted this year

Oh and they have already begun to find beefsteak mushrooms in south MO!!! YEA!!!!

About the strawberry jam....... If you arent set on putting it in jars, you should try freezer jam. Thats what I make and it is really good.
I use the liquid pectin and follow the directions in the box. yummy and super simple
 
I didn't know you had to wait for the persimmons to fall.?. Mine are always on the trees. I have to back my truck up to it and stand on the tail gate to pick them. I didn't pick them for me though. They got picked then put in the freezer so they are there when I make suet for the chickens.

What kind of maples do you have??? I have a few young trees around and have been thinking about taping them...to late this year...do they have to be sugar maples or will any kind do????

Ours are sugar maples-it's not hard, just time consuming to make syrup.​
