What are you canning now?

I usually put up a year's worth of peach butter, peaches and salsa every year though anyway, around 200 pints give or take. Now I have NO peach trees

Oh and in case anyone is wondering, on the bottom shelf of the center cabinet alone there are 103 jars from half pint to quart.

Okay then, if I were in your situation, I'd be canning everything I could get my hands on too.

Well, I have fruit trees, but virtually no fruit. Everything except the apples that was in blossom got snow on it. We had a unseasonably high amount of snow, didn't help that it would warm up then WHAMO, have some snow! My fig, apple, pluot, and plum trees have nothing on them. No blueberries either. My nectarine trees have 5 nectarines on them - it's usually so loaded that I'm picking buckets of them. My peaches have a decent amount of fruit, but I didn't have to thin them like usual. I told my DH it's a good thing I did all that canning last year, cuz there's not going to be much this year. (hopefully we'll have a great cucumber crop and I'll be making pickles)

Here's the mango lime jam I made today. It tastes wonderful. (it looks more yellow in the picture, but it really is orange in person) I had one extra half pint, but since a friend had my son most of the day yesterday and all of today, I gave her a jar and some eggs.

I did ANOTHER 6 pints of salsa tonight.....
Total of 27 pints of salsa so far.

I have some butternut squash that is ready to pick....... ANY IDEAS what it is like canned OR what else to do with it ? ?

Me too! I usually have tomatoes by now. Love my summer tomatoes, cukes, bell peppers, etc. Nothing beats home grown.

we dont have tomatoes til mid-late july...and then by beginning of August I'm swamped and cursing them! LOL
