I have 7 quarts of potatoes in the canner right now...only dug 1 row of potatoes. Thinking I will probably have at least 2- maybe 3 more canner fulls!

Do you have to pressure can potatoes?

Yes. Potatoes are low acid.

I believe they want you to pressure can all root crops, since botulism is a soil bacteria.

Well we have ate some out of the row and Our rows are about 30 feet long. I dug ours myself and I am only doing a canner at a time- more steps I know, but I don't have the room to store them. I will dig some more later after the rains stops (easier digging!)

We had some red potatoes (don't know the variety-DH bought them at the feed store) and I planted some Yukon Golds that I saved from some potatoes I bought at the grocery store. I have mostly BIG potatoes not too many little potatoes.

Next year I think I will plant more. This is the first year i have ever canned them- didn't know it was going to be so easy! lol. Also I just bought my All American PC this spring.
