What are you canning now?

have TWO HUGEEEEEEEEE industrial size stockpots simmering now of tomato sauce; trying to reduce it...
will BWB it later today...

then I am tackling some jalapenos for candied jalapenos (TO DIE FOR!! amazing! sweet heat!)

then tomorrow; about 45 lbs of potatoes!!

I've got another batch of cabbage thats not too far from harvesting and I'm trying to decide more kraut or slaw

We let it go the full 6 weeks. Last year I only went 3 weeks cause it smelled good and it was more salty than krauty. So this time waited out the six weeks, and it got real fermenty (whew!) and didn't smell so good in the basement, but when I would skim it, change the cloth and plate I would dig down and OM it was getting tasty. it was good and sour by the 6th week and tasted sooooo good. We kept sampling the whole time I was warming it up to can, we couldn't leave it alone....lol. Good luck with yours!!

I get them from the Amish. They have to sell them at that price or they will just have to throw them out in a few days. These are the bruised, mis-shaped, and soft spotted ones that they can't sell at the roadside stands and in the product section of the grocer. I am not sure where they got these in from this year. Last year they were getting them from Bader Farms down in Campbell, Missouri but these are in different boxes so I am not sure.
 
I noticed they were 2nds, but still what a price!! Have gone to Campbell to Baders before and gotten peaches, and bought the raggedy ripes; they taste soooo good!! Our trees just didn't produce this year, but the pricey boxed ones have held me back from getting any fresh; thank goodness we have some canned in the basement! So happy for you.......

Wow... I can't wait until our 3 peach trees are producing well. I'm still paying $1 a lb.

I do get my apples for $20 a bushel though, and we're not in a good apple area at all! LOL
 
I have never bought apples so I don't know what the going rate is. Last year's crop was a bad one though I know and the apples were scarce. I am hoping to get some grapes next week.

Going to the produce auction on Tuesday so I hope to get some goodies there. My sis went today and said they were selling flats of Okra for $1.50!! (by flats think the cardboard boxes that coke used to come in...24 cans single layer...) She said they had a lot of corn but were selling it at a 10 dozen minimum and she knew she wouldn't have the time to do that much corn this weekend. Hoping to get some good watermelons too.

They only have the auctions on tuesday and fridays. I can't wait!
