What are you canning now?

Honey, I run a busy full-time business & work part-time from home, plus full time mom, gardener & I home school! Some days I just fall out dead on the floor in the middle of the living room!!!

Tonight I manage 7 8oz & 2 16oz jars of pear jelly from all that juice. Ran out of sugar or would have done the pear, ginger & honey jam too. Saving that for tomorrow after work I guess.

I haven't canned pesto, but I have frozen it. I freeze it in individual portions in old (used but washed) yogurt containers. It keeps well.

Never canned cantaloupe, sorry.

thanks for the reply.

I borrowed the book from the library and I may borrow it again to find the cantalop recipe. it didn't say anything about processing but I may try it and see what happens.

Now i don't get this. a full time business is 40 hrs right? and full time mom is 40hrs right? and home school how many hours? Plus part time how many hours? I mean there are 168 hours in a week so 168-80 leaves 88 minus 56 for sleeping that leaves 32 for teaching and the part time job right? So when do you have time for a bath? You must look and smell really bad.

Sorry it's just a guy thing. I just watched about an hour of Tim Allen and I couldn't help myself.

I'm retired which means I do what I did when I had a job according to my wife.... Nothing.

You know what retirement is don't you ? Twice as much husband and half as much money.

I don't know how you ladies get it all done!

I am liking all this canning stuff, but I am up way past every one elses bed time ( including husband) trying to get it done.

I have tried to do the canning earlier in the day, but I just can not find the time.

Yesterday, I got 4 quarts of pears done. I peeled and sliced enough pears for another 3 quarts.
I woke up early this morning and got the 3 quarts of pears done before I put the kids on the bus.

I am out of sugar, so while I am taking my dad to to doctors this morning.... I am going to pick up some more sugar so I can get more canning done tonight.

I am just thinking that I won't be able to do all this canning when I do go back to work..... just not enough hours in the day for gardening, chickens, children, work and canning too.

So, it nice to hear that some of you ladies are managing it all.... now I just need to figure out how to do it too!

ANyone else use a crawl space to store canned goods?

I want to use it for a root cellar, but I'm worried about mice. But I've got 2 milk crates full of canned goods in it now: pickles, blackberry jam, blackberry jelly, canned peaches and canned blueberries.

I use whatever proportion I end up picking, just so long as the total amount is close to what's called for. So sometimes it's Straw/ Rasp jam, or Rasp/Straw, or Blueberry/Blackberry or vice versa. I have also added rhubarb and/or cranberry to fill in to get the right amount. I have "invented" some wonderful combinations that way.

Mice are terrible here. We've been without a cat for some time and they just kept getting worse and worse so we recently got a new kitten to help with the problem. Now, that said, even when they're bad they don't seem to care for potatoes, squashes, etc. At least not here. I've never had them mess with those things.
