Just had to hop on here and see how you all are doing. I am jealous to say the least.

I have only canned strawberry jam so far. I have not made use of my beautiful garden like planned -- found out baby #3 was on the way in June, so I have spent the majority not wanting anything to do with food.

I still have hope that I can get some salsa done.
 
I finally got my free Ball pectin. It makes two 8oz jars.
So, I figured that I would try the watermelon jam- just in case I didn't really like it.
EVERYONE likes it! It did have a strange smell. I can't figure out what it smells like. Not bad... just not what you would expect.
I think I will make more watermelon jelly next spring, but strain it so it will have that lovely color without the cloudy jam bits.

Next, I think I will try the candy apple jelly.

Everyone - I've got a book from the Library that looks like I might buy it. Ok I will but anyhow the title is "PRESERVE IT". It's got some great recipes in small amounts. Like Rosemary Jelly and Hot Pepper Jelly.


What I need to know cuz I want to make some is about ginger. The recipe for Rhubarb , Pear and Ginger jam, calls for 2 small balls of stem ginger, (finely chopped). I know about fresh ginger but what does it mean "small balls?"

gotta run, gotta watch baby while the kids run to Lowes for me. Pebbles on sale.

It's that time of year again for me to stock up on jars before they are gone. Cart 1 of 2 cartloads. Walked out of the Walmart with 47 cases of jars, 84 boxes of lids, 30 boxes of pectin and a smile. I'll be back next week for 2 more cart loads

The ginger rhizome has what I would refer to as 'buds' which could be called 'balls' because when broken from the main stem, they are round- about as big as the tip of my thumb. They are usually more tender because they have less fiber. If they are fresh you may be able to put then through your garlic press.
Ginger is my favorite spice/herb/medicine that God ever gave us.
