Everyone - I've got a book from the Library that looks like I might buy it. Ok I will but anyhow the title is "PRESERVE IT". It's got some great recipes in small amounts. Like Rosemary Jelly and Hot Pepper Jelly.
What I need to know cuz I want to make some is about ginger. The recipe for Rhubarb , Pear and Ginger jam, calls for
2 small balls of stem ginger, (finely chopped). I know about fresh ginger but what does it mean "small balls?"

The ginger rhizome has what I would refer to as 'buds' which could be called 'balls' because when broken from the main stem, they are round- about as big as the tip of my thumb. They are usually more tender because they have less fiber. If they are fresh you may be able to put then through your garlic press.
Ginger is my favorite spice/herb/medicine that God ever gave us.
