OMG I have finally caught up all 566 Pages...........
This has been a totally awsum/ rewarding/ helpful/ sometimes crazy thread, I love it..........
So now I can finally post about canning that I have been doing.
I have been using a WB caner for many years, I'm 46 so way to many years hehe, last year my hubby bought me my pressure caner for doing meat and beans, so my canning wants have compounded my canning craziness this year, also started with chicks in March and now have processed 15 of my 34 roosters, so will be getting a canning work out again soon. I want to can the meat and make stock, or chicken soup. I always blanched and froze all my veggie's except Tomatoes, which I made into salsa, juice, or chili sauce. I froze or dried all my meat, I want to build a smoker..soon very soon. so this year I have done a lot more than normal. I did a case each of quarts of Sweet corn, beets, carrots, rutabaga, yellow beans, and green beans. Tomato juice of course, stewed tomatoes, chili sauce, and 12 pints of salsa. I also filled my freezer self with all of thee above in freezer bags. ( I have a sealer but its crap I paid 129.00 for it and it has never worked right, the bags don't stay sealed). anyway I also made Strawberry/Banana freezer Jam, and spiced Apple pear freezer Jam, with the last of my spiced pears from last year. I have Black Raspberries and a strawberry bed which did little this year with all the rotten weather we had, what actually did grow there the birds got.
I got so many great idea's from this thread though, I will be a busy beaver over the winter, because I have collected many flowers and things for tea and dried in the dehydrator, for winter now I can also make Jelly from them
I have a question for the experts though, I have a hawthorn tree full of berries is there any use for them beside health wise? I also collected several bags of flowers for tea this spring they smelled so good I had too. If you never smelled them they smell just like honey........... I have to fight the bee's for the flowers, Could this be made into Jelly as well?
