What are you canning now?

Well all I did today is dig out the pressure canners. I was delighted to find that the large canner has a new gasket and weight. The smaller canner still needs a gasket, and I will go ahead and buy a new pressure release button thing. I figure better safe than sorry. My DH even found the web site with the right size gasket for me. I am planning on canning soup and stew. DH likes the expensive cans of ready to eat soup, and it makes me crazy, because I know that I can make better soup than a large company.

So I will have to let you know if I get anything done. I should just can the pot roast stew I made this weekend. DH is leaving for WI for the next three weeks. He has to teach school back at the factory. So it's not like I won't have the time to can the leftovers.
 
My sauce is nearly done simmering in the crockpots! I just love that idea ahoever brought it up...we did the tomatoes last night in the squeezo and dumped it all in the crocks for the night. I have a few ingredients to get at the store to add to the sauce then will can it up!

Thanks for the suggestions for my hot peppers...will check for ingredients and get some of those made today too...the apple pepper one is intriguing (and I have apples languishing also!)
Yes Ghostrider...I have lived in WI my whole life. Grew up in the Milwaukee area and now we are between Madison and Milwaukee. Your canning shelves look full to bursting! Good work! I have had weird color changes in some of my pressure processed stuff too...once I tracked it down to the wrong salt added...otherwise who knows?

I know there is a raspberry pepper jam out there also. Great xmas gifts. Pepper jams are always requested the most.

Hey all, picked a lot of apples today even though it's rainy and yuk. Now if someones got a recipe for something other than sauce that would be nice. Oh and not apple butter no one here likes it, sorry. Pie filling or something else?

Hey Rancher...maybe make up the pies and then freeze the for later baking? MMMM!

Done canning for the day here...my legs are tired! I got 10 pints of tomato sauce plus...and some LO to have for supper over spaghetti squash! 4 pints of Cowboy Candy and 3 pints of pepper jelly! Here is a pic for you!

Perhaps, you could do the same with the apples. You peel, core, and cut the pears into chunks. Then, make a light syrup with spices in it. Pour the syrup over the pears and pressure can it.

Got a 1/2 bushel of assorted apples for 7 bucks!

Gonna go back and get another 1/2 bushel and make me some apple sauce! I work all this week, so it will be the trick to get it done. I inspected each apple closely, and it looks like they are just windfalls. I only see a little nick here or there...not soft of going bad, and doesn't look like bugs got em. Heck I'd eat em if we didn't stop at an orchard to get DH's favorite apple - Tolman sweet.

To date I've canned:
24ish pints of green beans
5 pints of hot banana peppers
5 quarts chicken stock
5 quarts pasta sauce
4 pints pasta sauce
9 1/2 pints strawberry lemonade jam
5 pints yellow wax beans

Wow, I've been a lot busier than I thought!

Should be canning 14ish quarts of apple sauce and another 2 quarts of pasta sauce shortly! I also got like...15 lbs of cherries I have no idea what to do with. Also red bell peppers I'm gonna roast and can....sheesh! Guess canning season seems to be taking off for me now!
