What are you canning now?

I haven't been able to do any canning this past week because I have been making goodies and spooky decorations and costumes for our costume party this Saturday but come sunday morning those jalapenos are making some yummy cowboy candy and all those berries in the freezer are making some jam!!!
 
FINALLY!! I have computer access again. Crashed the hard drive the other day and had to rebuild an older PC so we could have a computer while we decide what to replace the crashed one with.

Attempting the pressure canner today. First time.... ever. I have an innate fear of things that can go boom no matter how remote the possibility.

So... in the maiden voyage of the canner right now is just a batch of boiled peanuts, not canned, just for eating, I'm about 30 minutes into the gentle rocking stage. Not quite as freaked out now. Once it's done then I'll start canning the rest of the 50 pounds of raw peanuts I have sitting in my living room and soaking in the tub.

13 pints of apple slices, 3 pints cowboy candy with habaneros, 5 half pints of dilled pearl onions, and 6 pints pomegranate jelly yesterday. If everything goes well and I have a few minutes in the next few days I'll be making candy apple jelly.
 
Tell us more about the peanuts. I am going to plant a few rows next yr, but planned on roasting them or using them in peanut butter. I considered playing with different flavors of boiled peanuts, but didn't like how time sensitive they would be.

Looked @ the canning recipe, sounds easy enough-- but what are they like when you open the jar? Do you open the jar & strain the brine off?
 
Depends on how salty you like your peanuts. With the batch I just took out they are pretty salty so for us we'd drain the jars, toss the peanuts in a pan, add a little fresh water and heat up a little (we like our boiled peanuts warm).
I've never had home canned before but I have bought some at the store. I'm assuming they'd be like them in the firmness. This eating batch is a little firm but still very good.

And FYI, from what I've read 25 pounds of peanuts may produce around 50 quarts. I'm canning half and freezing half. I usually freeze about 25 pounds a year anyway and it never makes it to the spring!
 
Haha... got a surprise envelope in the mail. Looks like I forgot a ribbon at the fair when I picked up my jams. Had an honorable mention for my Lemon biscotti..

So we ended up with 5 ribbons in total from the NC State fair this year! HOORAY!!

testing out a new recipe I threw together. I'm going to call it Crangria Jam. It consists of cranberries, apples, oranges, concord grape juice and a secret ingredient......it smells AWESOME!
 
So... yesterday was 21 quart jars boiled peanuts with another 7 quart bags into the freezer.... today is 28 quart jars.......

I still have another dozen or so quart jars and my mom is pulling out all her stashed quart jars for me to make her some as well. Boy, next week is going to be busy!
