What are you canning now?

I used corn starch for my apple pie filling. After it sat awhile it got lumpy. When I put it in a pie it works great though!
 
I made some recently too. Used cornstarch and not enough I guess.. It wasnt thick enough but I just strained it and made a pie. It was pretty good! I also strain it and use the apples for coffee cake too. Lastnight I popped a quart and just started munchin on them! Its pretty much like apples in a medium syrup and tastes like apple pie! Mmm! Now where in my fridge did I stick that open jar

It did get this inch layer of thickened jelly stuff at the bottom though.. i just pick it out when I dump the jar..

Really shouldn't can corn starch. Not considered safe. If you want to can ready to use pie filling use clear jel. Or, just add the corn starch right before baking.
 
I need to get off my rear and process some chickens. I have some giant Cornish Xs that need to be processed. Than, I need to make a bunch of stock. I can usually make a batch of 7 quarts of stock per chicken, using the neck, feet and back, plus carcas, organs go to the dogs.
I figure 7 quarts of good, low sodium stock at our grocery store is $28.00. That's not counting the 5-6 meals I get out of these huge birds for my husband and I.
They are a lot of work and feed is expensive in AZ but I get my money's worth out of each one. Haven't had a single death from this batch,either, knock on wood.
The stock is so nice to have in the pantry, I use it for everything!

Did I say she should can corn starch? I am sorry if it came out that way, but I don't know any other way to put it - can your fruit without the thickner and then add the cornstarch before making the pie. Is that better?
