What are you canning now?

Math ACE- do you make your banana peppers hot? I made them a couple years ago but they didn't taste like the ones you buy in the store. Mind sharing how you do yours? I have a lot of banana peppers in the garden!


Potatoes I did earlier today, the others are still in the canner.


Those potatoes sure do look good.... Patience .... WAIT... Don't going digging up the garden yet ! LOL....

It is so good I thought I would share my simple recipe.

4 cups chopped hot peppers
4 cups chopped onion
2 cups cider vinegar
2 cups sugar
1 tablespoon salt

Seed and core the peppers as you see fit and then chop in a food processor to a "relish like" consistency, make four cups chopped. Repeat with the onion.
Combine all into a pot and boil for about five minutes

Seal in jars and process in a water bath for ten minutes.

I used half Serrano and half Habanero peppers so this is not for the heat intolerant (I'm a little light headed as I type this )but I don't see why you couldn't use whatever peppers you liked or had.

This made a total of 5 pints, if I were making it again I would try to squeeze some of the water out of the chopped onions cause the finished jars are a little soupier than I would like.

Awesome! Don't they look so much better unpeeled? The recipe I used told me to 'peel' them... but I didn't want to. It was hard work enough and I leave the skin on for potato salad and mashed potatoes anyways.

How many jars you get total?

Turnips? Has anyone canned turnips? I have 2 different sets of instructions. One says to clean, chop up, toss in jar, ladle to 1 inch head space process in canner at 10 pounds for 35 minutes (quarts!) The other says to peel, boil 5 minutes jar and process 35 minutes at 10 lbs (pints!)

Which one is it???

I have enough for 6 pints I think. Will be getting more here over the next few days.

Here's what I am gathering (I have never done this) I think blanching them will help keep their color and shape during the canning process. That's all I did with my potatoes, lemon juice and a quick blanch for them to keep color. With 35 minutes in the canner 'cooking' I think that is plenty.
 
How is the texture of home-canned potatoes compared to that of store boughten? I've never canned them before -- just stored in cool storage -- because I don't like the texture of store bought canned potatoes.

The texture is just like boiled potatoes nothing at all like store bought canned potatoes. I have never canned Russets - only new potatoes though. I always add salt and onion flakes to them just because that is the way we like them. To cook them I just add some butter and heat them up then eat. SOOOO GOOD!!!
 
Just finished green "english" peas. They started out as sugar snaps,
then when I get so busy with everything else in the garden, I let them
get bigger and WALLAH, green peas. Great for stews and soup this winter!



Has anyone ever canned broccoli?

I usually freeze, but just curious.
 
Nothing to can today, but I did bring in 3 cups of green beans that just started. So in a week or 2 I should be canning green beans from the 60 vines I planted! Whooo
