What are you canning now?

just took 7 quarts of potatoes out of the canner. Was going to make the Zesty Zucchini Relish that is in the BIG ball book, but alas I don't have enough vinegar!! Been eating too many cucumbers and onions I guess!
 
Ok canning buddies....

Turnips? Has anyone canned turnips? I have 2 different sets of instructions. One says to clean, chop up, toss in jar, ladle to 1 inch head space process in canner at 10 pounds for 35 minutes (quarts!) The other says to peel, boil 5 minutes jar and process 35 minutes at 10 lbs (pints!)

Which one is it???

I have enough for 6 pints I think. Will be getting more here over the next few days.

I have canned turnips, I peeled and quartered. They did turn a little, but did not effect the taste.

Jealous of all of you living in places that have produce ready for picking and canning! Up here in NH, it will be quite a while before anything is ready! Strawberries are just now ready. That will be my next weeks project.
 
I've been counting green tomatoes today... I have 36 plants. I'm about to be swamped with more then I can handle! LOL
Last year, I had 40 tomato plants in the ground and canned like crazy. I made salsa CONSTANTLY last summer.....

NOT HAPPENING this year! RAIN, RAIN, RAIN.... We have gotten so much rain over the last 10 days or so that all my plants are dying.
We've had burn bans and drought conditions for YEARS! Not now... We've seen 8 to 10 inches of rain in the last 2 weeks!

I am bumming because I don't think I will be canning very much this year..... BUMMER...
 
Whata variety of tomato did you plant? I have tried many, and only a few seem to do really well.

Ive had about 10 inches of rain here in Ocala the past week. Plants are just loving it. We're still way under our rainfall totals for the year, tho.

OMG, it is raining again !

My yard plants, flowers, shrubs, etc are loving all the water, BUT the plants in my garden are turning brown and drying...

I planted rutgers, celebrity, better boy, and tomatillos.
