What are you canning now?

It would be the same for canning any other tomatoes... just a lot more work. I'd roast them and either make them into sauce or salsa.
 
just make sure when you add more things that are non-acidic, you make sure you have ENOUGH acidity in that sauce...

I WONT use a canning recipe NO MATTER HOW GOOD it sounds if it isnt approved; because I will not chance
anyone getting sick..just my rule...but its a good rule lol...

NOW that being said;

I dont have the newest ball book; can you copy the recipe here4 for that jam?? the vanilla one?

Also, has anyone made dandelion jelly? I want to but kinda scared lol...the reviews say it tastes like a mixture of honey and mild apples!

PS--LOVE cowboy candy..one of my absolute FAVORITES!!!
I make dandelion jelly almost every year...a huge favorite around here! It really does taste like honey/mild apples. That is just how I described it to the gal I pm'd the recipe too!

First time I've ever made cowboy candy. OH. MY. WORD. Simply AMAZING! The reviews said to can any remaining sauce, I was skeptical, but did it anyway. Used some of the sauce brushed on steak tonight....LOVE cowboy glaze! So good. Hubby loved it. I will be making many more batches of this!
 
I'm getting lazy in my old age. I just bought one of those electric jam and jelly makers that Ball makes. It's great when you only want to make small amounts and are too lazy to go pick the berries.

Today I bought new 8oz. jelly jars, rings and lids, pectin, and several bottles of 100% juice....apple, cherry, grape, pomegranate/cranberry. Planning on making some jelly vewrry soon.
