What are you canning now?

I don't even own a Water Bath canning pot, my pressure canner does double duty for everything. I don't see any point in wasting the storage space for another giant pot when that one works just fine. :)
 
Good deal! I assumed so but better safe than sorry, right! I have a little over a gallon of blackberries in the freezer that I am going to make some seedless jam. My DH usually does the canning due to me watching my favorite aunt blow up her pressure canner 3 seperate times! I think I am ready to do it on my own now. Nice to know I have you guys for moral support and any questions I might have. Thanks everyone in advance!
 
Can someone tell me if I can putnfresh basil in mymhome made pasts sauce I will can?
I put fresh basil in mine last year....tasted fine. It is one of the ingredients in the Ball recipe for spaghetti sauce so it is safe. It doesn't stay bright green though.

I'm not sure about the others, but dandelion jelly we use just like any other jelly. Tastes like a cross between honey and mild apple. And the color is so pretty!

Its in the newest ball canning book;) i accidently did it this way...there was vanilla or lemon strawberry jam...my jam didnt set right on either batch :( so I combined both batches to recook and fix!!! Added more vanilla and lemon zest and juice to taste and WALLAH!!!! Lol this is typically how I come up with funky flavors!!!
 
Made cowboy candy last night. Picked more strawberries this morning with the kids. One more batch of jam, then the rest go into the freezer.

My coupons came in the mail today!

I do it all the time - what's pasta sauce without basil?  It doesn't stay green and will look like you added spinach, but the flavor is wonderful.

just make sure when you add more things that are non-acidic, you make sure you have ENOUGH acidity in that sauce...

I WONT use a canning recipe NO MATTER HOW GOOD it sounds if it isnt approved; because I will not chance
anyone getting sick..just my rule...but its a good rule lol...

NOW that being said;

I dont have the newest ball book; can you copy the recipe here4 for that jam?? the vanilla one?

Also, has anyone made dandelion jelly? I want to but kinda scared lol...the reviews say it tastes like a mixture of honey and mild apples!

PS--LOVE cowboy candy..one of my absolute FAVORITES!!!
