What are you canning now?

Hey everyone, been awhile!

Been a busy year between chickens, kids, garden and more. Canning is definitely under way and managed to make a few things even with my in-laws here this past week.

Caramel Apple Bourbon Butter


Candy Apple Jelly


Peaches (hoping to enter the one on the left in the fair)


Pickled Quail Eggs


And just a glimpse at this years onion crop, there are some bigger than softballs! Getting ready to make onion jam!!
 
HenThymes, Could you share the recipe for the caramel apple bourbon butter , and onion jam those sound like a couple I would LOVE to try. If not I completely understand but those sound amazing
 
I don't see why not. I've frozen peach pie filling before.

They had a large basket at the market for $10 and I was thinking of buying one and peeling them and tossing them in the freezer til I get the chance to do them up. Plus I'll have to do the same with the raspberries and any rhubarb I can find.

I have family here from TX and it's the only the second time I've seen my GS. Lord I will miss him. He's only 1yrs old and his first word was "Chicken". Of course it's not exactly chicken but he and we know what he's saying. He went into the garage today and dragged out two empty feed containers and was headed for the coop.

Here's some of my canning stuff from the last week or so.
These are pintos we use for refried beans.


The first batch of peach jelly. One of my favorites.


This is sand plums that have been strained. We couldn't believe how absolutely red they came out.



My daughter eating the foam off of the peach jam. Both my kids love to eat the foam that I skim off the jam and jellies. Go figure.



Also canned up some tomato/basil soup all ready for winter. We ended up drying our extra squash in the dehydrator for use in soups and stir-fries later on. They are amazing to eat just dried out, almost like sweet chips.

This is good to know. I knew it worked this way with tomatoes but didn't know it worked the same with Peaches. Thanks for the info. Some day's I just don't feel up to a long day of canning and you know how it goes.
