What are you canning now?

If you have access to Boysenberries or Blackberries try mixing 2 parts Boysen/Black to 1 part Mulberry - gave them one more depth of flavor. Very good - even passed the mother taste test - she liked it very much. We had so many Mulberries this year. Harvested the tree twice and got 3 gallons juice which I put in freezer until I can get to jelly. Then made 18 1/2 pints jelly - Guess what everyone is getting for Christmas.

Is your tree gigantic like mine? I can only pick from the bottom branches and the birds and squirrels eat from the rest. Most of the berries wind up on the ground giving the children stained purple feet for the several weeks we have berries. Have you figured out a way to harvest more berries? I've tried laying a sheet on the ground and shaking the branches, but then I wind up with lots of yucky berries or under ripe ones and bird poop mixed in.

Not canning much yet. I will when the tomatoes finally get into full swing. I am freezing 4 bushell of sweet corn and 6 bushell of field peas this week. No time for much else. Shelled peas until midnight last Mon.

Yes, the tree is a least 60 feet tall. We use a large tarp and a long stick and hit the branches with a quick hard wack. Then we funnel the tarp and gently harvest the berries. I wash the berries just before we put thru the "squeeze-o" to get only juice. The birds get the ones on top but we get really alot on the tarp.

Yes, as stated in my post #1049, I am aware of only hand tighting the rings. Been doing this for many many years and my pressure canning process has not changed, but the seals have changed. Also, I have not yet had any reply to my numerous emails to Ball/Kerr regarding my concern.

Does anyone know of another canning seal manufacturer? If I understand correctly Ball/Kerr/GoldenHarvest/Bernardin, are all one in the same now?

Congratulations! Wild blackberries were my first canning experience too. You are NOT a dork! Did you pick the berries yourself?

Thanks - and yes - my DS and I picked them all last week - quite a few days actually. There's alot more to pick - it seems every day there are tons that are ready! I've got more scratches on my legs and chiggers in places that a chigger shouldnt be than I care to have!

It was worth it though - picking them made it that much more special!
