What are you canning now?

LOVE my pressure canner!  I put up about 25 pints of nice green beans last year.  I also use it to can chili...make a huge pot and can it in pints so there's enough for a meal for one.

Sonew, ya just gotta tell me...what's monkey butter???

Have fun...I changed the recipe to 1/2 cup of coconut not 1/4 cup
And mash banana slices ...not pureed but mashed some
Oh and 2 cups of sugar not 3 and it was still SWEET!

Nothing today beans tomorrow, anyone every can Dragons Tounge beans before? any tips.
anyway did 4 pints and 8 half pints if Lemon/ Blackberry jelly yesterday....... yummy stuff, but now I wish I would have added some ginger after reading the last jelly post, that made my mouth water.......
Should have a ton of tomatoes this year too..... .Kim
 
Okay, I am a water bath canning girl -- so far. I'd love to can some dried beans like kidney, black, and maybe pinto. Any of you can them? I know I'd need a pressure canner. My aunt has an American something or other brand. I was thinking of trying my hand at hers to see if I like pressure canning and do up some beans in the mean time.
 
Thanks for the info, Sonew...sounds yummy! I'd change it up some too since I'm not real fond of coconut. I like to use the crockpot for making butters...don't have to do nearly all the stirring. I put it on low and use a couple of chopsticks to hold the lid up to let the excess steam out...works great!

I only can green beans. Where I can I prefer to dry stuff...it keeps longer and takes up lots less room.
 
I had a busy evening of canning rosemary jelly, hot pepper jelly and french vanilla peach sauce. 26 jars in total. :)

Thanks to Erin I triple filters my rosemary tea for the jelly and it is so sparkly and pretty! These are definitely going to be entered for our herb jelly category this year. The hot pepper jelly, has bits and pieces since I like chunks of pepper in mine, so pretty and chunky. I learned there is no hot pepper jam category, so I won't be entering it this year. Last year I won a blue ribbon for my blackberry jam... now that was HARD work. I actually removed some seeds, but left some in so it wasn't as seedy. That I put crazy time into, and my husband thought I was nutty until I came home with that ribbon. Got 3 second places and 1 3rd place for baked goods. It was a good year and pocketed $35 :) I didn't enter the max amount of jars... so this year I will enter more I'm sure!
