What are you canning now?

Getting ready to cook up and can vats of chili and minestrone, all from homegrown ingredients. Soon as our last 2 soup chickens are butchered, I'll do a vat of chicken soup.

Didn't plant as many green beans this year, so the 26 quarts left over from last year will have to do.

Wow, lots of work ahead for you! I need to put up some chili as well. I used all the tomatoes I had to make spaghetti sauce though, so I'll have to get some more. Sure wish we had as much room as you to be able to grow all those luscious green beans and tomatoes.
 
OMG. I don't subscribe to this thread and missed over 100 entries. Made Black berry buckle tonight after reading about it in a Country magazine. It's cooling now we will see how it's tastes.

Sonew- I really missed talking with you at the meet. If you come this way lets get together.

I did up some tomatoes and am thawing out frozen ones to can up and make more room in the freezer.

Can anyone tell me how to take the seeds out of tomatoes? DW , who can't make sauce anyhow insists they make spaghetti sauce bitter. I say just toss in some baking soda but she's stubborn.

I know!!! But it was great to finally meet you!!! The tomato seeds...i cook them right in!!! If not tell dear wifey, who cant make sauce, to use the foley food mill and get them out that way ;) i use the kitchen aide strainer that hooks onto my mixer if I need to for blackberries and I could for tomatoes...I just choose not to...imlike them :D

I cooked down about 75 lbs of tomatoes........... into Juice and Spaghetti sauce, took me all day I'm still waiting on my Jars to sterilize, then canning the juice first, then the sauce... Long day of tomatoes.

Sonew123........ would you share you berry cherry pie filling recipe it looks delishhhhhhhh............ Kim
 
Sonew - I believe your address is on this forum somewhere and I'm going to find it and put it aside. If things get tough I'll knock on your door. With all that food I'm sure to at least eat.

I'm doing tomatoes too, but I don't have nearly that many. I'm afraid I've planted to late or not enough plants to get enough ripened at the same time. I do them in small batches though.

The BlackBerry Buckle came out good sort of but I think the chickens will get most of it. No one really cared for it. The only sugar was what you sprinkle on top so it's kinda bland. I like these types of things coffee cakeish.

We hope to go and pick what apples are available considering there are said to be few and the variety not large. I don't really need many but I gave away lots of sauce and jelly last year. I made sure to keep some Currant jelly from last year as I didn't get any this year. Nor gooseberries. I am worried about my plants as they seem rather bare in leaves.

Does anyone know what fertilizer I might use? Strangely enough with this drought I think there is a Hollyhock coming up from last year that I though had died. I do like old flowers. When I was a kid they grew in the fields as weeds. I knew little of gardening then and not much more now, but the fun is in creating and learning. I think.
 
Heading to Bankers orchard shortly and Prays farmers market in Plattsburg!!!!! Im praying for a good huge bag of apples to get apple butter going today and tomatillas for salsa!!!! Ill update you guys as I know there are locals around me that go there too but are on this thread!!!
