I'm not terribly fond of plain tomato juice, but I like the mixed vegetable stuff. I always strain my tomatoes before canning anyway because I like them thicker either for sauce or for adding to chili. So, why throw the juice out? DH likes it and it's not cheap in the stores (or as healthy as we make it). I always season mine with salt and pepper, some basil and parsley, and juice other veggies and include it...carrots, onions, lettuce, celery...whatever seems like it'd taste good. I tend to just throw stuff in and mix it till I like what it tastes like and then can it. Not very precise, I know...but I almost never use a "recipe" per seWell I just did 7 quarts and 1 pint of tomatoes. Plus strained the rest for a glass of juice for tomorrow breakfast.![]()
But I have some questions.
1. Do you have a recipe for tomato juice that you like? Do you add anything to the juice to improve the taste?
2. Is it worth all the trouble to can? Are we saving any money or is it just cuz it makes us feel good?
3. Why do you can food?
So, My crock is cracked, I've used both of my large stainless containers. Has anyone ever brined pickles in one of those plastic buckets, like the Home Depot buckets? Is this safe?
