What are you canning now?

Well I just did 7 quarts and 1 pint of tomatoes. Plus strained the rest for a glass of juice for tomorrow breakfast.

But I have some questions.

1. Do you have a recipe for tomato juice that you like? Do you add anything to the juice to improve the taste?

2. Is it worth all the trouble to can? Are we saving any money or is it just cuz it makes us feel good?

3. Why do you can food?
I'm not terribly fond of plain tomato juice, but I like the mixed vegetable stuff. I always strain my tomatoes before canning anyway because I like them thicker either for sauce or for adding to chili. So, why throw the juice out? DH likes it and it's not cheap in the stores (or as healthy as we make it). I always season mine with salt and pepper, some basil and parsley, and juice other veggies and include it...carrots, onions, lettuce, celery...whatever seems like it'd taste good. I tend to just throw stuff in and mix it till I like what it tastes like and then can it. Not very precise, I know...but I almost never use a "recipe" per se :)

I can stuff because it's generally cheaper, it's healthier and it gives me a great sense of satisfaction to eat something I've preserved myself :)
 
Oh forgot to add I also did up the apples.

I ended up with a few jars of mushy like apple sauce. Perhaps because I used my emersion blender ?

and some lovely jars of Apple Pie Filling. Sadly one didn't seal properly so we were forced to eat the WHOLE thing!!




And Also managed a few jars of Ginger Vanilla Apple Jelly.

I experimented with this one because really apple peelings and cores
make the nastiest tasting juice ever!! LOL

Luckily my jelly turned out nice.

So, My crock is cracked, I've used both of my large stainless containers. Has anyone ever brined pickles in one of those plastic buckets, like the Home Depot buckets? Is this safe?

They have food grade buckets online, I bought a ton + tupperware from a company online for all my baking and canning stuff since I buy all our food in large quantity. Restockit.com I do believe is the website.
 
What are these food grade buckets and what are they used for?


I washed up some apples to do tomorrow. The ones we bought at Mclusky's are not all that good. The lady told me they were fresh but there are quite a few with spots on them. I'm not happy at all.
Not much better than the ones I got for free. There will be a lot of peeling I think. At the very least I'll have to cut off the spotty parts.
