Ok - Who posted the banana butter recipe?

It is sooooooooooo good! I just made a huge batch. There were 2 large bags full of bananas for 99 cents each at the grocery store tonight and I bought both of them.

It's like banana bread in a jar!

I also made peach salsa - Yummy! And HOT!

I'm too tired to count how many pints there are, but it feels like a hundred.......off to sleep and then get up and do it again.

Kim, how kind of you to share your recipe. I have to try this today. I have all the ingredients and it's been on my "try" list for a couple of years. I've just never found the right recipe. I should have asked.

Mmmm, banana butter. Hope someone can point us in the direction of that recipe.

Thanks

I've been working on Sundried Tomatoes with Sea Salt and Basil this week. Doing them in the dehydrator.

We're overrun with lovely paste/canning tomatoes from a friend's farm. He's gone for 2 weeks and we're picking his market garden to take to market with our own produce. Look at these lovely tomatoes....uggggghhhh, but they do not sell well. What a pity.... they taste great, we even cut one open for display AND offer a box price. Oh well.... Sundried Tomatoes and Salsas will sell later and they can just pay more for those! LOL

Banana butter! You people are terrible! I'm already thinking about how I can make hot pepper jelly, I don't even like hot peppers! I do however like bananas.....

Wow those tomatoes look like they would be great for canning. Much better than the little romas.

Also, has anyone used grape leaves in their pickles to keep the pickles crunchy? I saw a recipe last night that discussed using them. I'm going to give it a try. Problem is you have to wait over a month to see if it works with pickles you know...

The recipe just said to add 2 grape leaves to each jar of raw packed pickles. That the grapes leaves helped the pickles retain their crunchiness. From there they went all "we don't recommend artificial substitutes for the grape leaves, just do without".

Here's the link... http://pickle-recipes.itsallgud.com/hot-garlic-dill.html

I
would guess that fox grape leaves would work just fine. Fox grapes are often used in breeding programs for various disease resistance and other plant type selections.

(Oh and lucky for me my neighbor is growing grapes, I'm going to sneak over there this afternoon!!)

edited to add comment about degenerate behavior

Thank you insideart, very clever advice. I am going to go read that article right now. Our old house, now used as coop, etc. is covered in wild grapes. You make jelly out of them so..........?? LOL thanks a bunch.

Kim_NC Thanks for posting pepper jelly recipe. I'll post the one I have for the Jalapeno Apricot which is a good one too. Nice balance between hot and sweet. You use dried apricots so don't have to worry about having peppers and apricots at the same time. Recipe at home so will post later.
