What are you canning now?

I have found recipes for canning ham in soups in the Ball canning book,but can I " can" just ham? We were given a large country ham and even with making multiple things there will still be plenty left over to put away for later.

We did two large hams for Christmas and two large mac and cheeses thinking half would go in the freezer. I forgot the 17 year old was such a ham and mac kid. They never made it to the freezer.
Should I just send you the kid for a couple hours? That should take care of the ham.

Yes, that is it, except mine did not call for garlic. I am going to make them 1/2 fooled you jalapenos and 1/2 regular. They get too hot for me other wise.

I hate making them because my hands burn for so long, and they eat them up so quick. Some things are worth the pain though.


Nitrile gloves are your friend. ;)

No reason not to. Just follow the recipe in the Ball book for pork. Make sure to pressure can and not water bath.

I have one of those 17 year olds too! I also have three younger boys too- 10, 9, and 7. Soon I won't have ANY leftovers ,but for now I will put up while I can! My 19 year old daughter never has their appetite. Thank goodness!
 
I will have to try pork and beans again. I canned some earlier this year and the consistency of the beans and sauce wasn't right. Some beans were squishy and some too hard and there needed to be more sauce. I put the beans in, then poured the sauce into the jar on top of them. I think I'll mix the beans and sauce together and then put them in the jar this time. We had scalloped ham and potatoes for dinner tonight with only a serving spoon of leftovers!
 
I tried the ball blue book for tomato and basil sauce, as a spaghetti sauce, and I didn't really like it. Any good canning tomatos sauce recipes? Or how to make tomato paste at home and can it? I ended up using a quart of tomato basil sauce, a pint of whole tomatoes and a can of tomato paste from the store. I use a lot of tomato paste and would be nice if I could make it instead of buy it.
