What are you canning now?

While driving home last night the dah! light came on in my head! When talking about making our own vanilla exact I was thinking that my expensive "Bourbon" vanilla was made with well you know Bourbon - but after ordering the sampler pack yesterday which consisted of "Bourbon" vanilla beans I figured it out. Checked the bottle this morning and sure enough it was talking about the "bean" not what is was processed in. Oh well, I always say never to old to learn something new.

I ordered the sample pack of beans too. How many beans to a 1 liter bottle of vodka? Kim posted 4, but is that enough or is that the really big/long beans? I'd like to get 2 or 3 bottles started for Christmas gifts.

I don't know how big a liter bottle is but I put 8 inch beans in my bottle...and I used about 7-8 split beans in it. Here is a pic of my bottle. You need a lot of beans in there to get that rich vanilla flavor. I just made my own label for it. We should make these up now if you want some wonderful Christmas gifts

And as I learned...I just keep refilling my bottle as I use it with more vodka. It mixes with the aged vodka/bean mixture and is great!
 
Any suggestions on where to find attractive inexpensive bottles for the extract?

Also, thanks for the input on how many beans you use, Ozark Hen. I was trying to figure out how many beans I should get for the amount of folks I'd make extract for...

That would mean about 5 beans per liter of vodka. If they send me short ones I'll have to use a couple more, but I was hoping to do 3 or 4 liters with the 20 beans I ordered.

I have never ever had a pickled egg. Are they hard to make? What do they taste like?
