That's how I do mine. I think that there really isn't a guaranteed way to can them for long term storage. People do make and then and store them for long term, but they take a chance with it.
I have never ever had a pickled egg. Are they hard to make? What do they taste like?
Personally, I have never tasted one, but DH loves them.
12 peeled hard boiled eggs
1 cup cider vinegar
1/2 cup water
2-3 whole garlic cloves
3 tablespoons pickling spices
5 tablespoons sugar
1 teaspoon salt
1 fresh red chili pepper (optional for people that like it hotter)
Add all ingredients together (except the eggs) and boil them for 10 minutes. Put the eggs in a glass jar. Pour the liquid over the eggs. Put a lid on the jar and store it in the fridge. Leave them in the fridge for 1 week before eating and keep them refrigerated after opening.
ETA: These also need to have Surgeon General's warning on the label: Giving pickled eggs and beer to men may result in toxic gas emissions.
