What are you canning now?

Hi folks, too many threads to follow for me. Anyhow has anyone made Dandelion jelly. I gotta decide whether to do it as they don't last long around here. I have a recipe that calls for 365 flowers.

Getting the garden ready and chicks are hatching. Spring is my favorite time of year.

Wow, that sounds really interesting. Would you be willing to share that recipe?

Did 13 pints of carrots from my own garden. I was so excited about being able to grow carrots that we ate a lot of them fresh.

Also did 56 jars of Habanero Gold jelly for the farmers market. My most popular variety.

365 seems like a fun number because it is the days in the year,,, but do us a favor and measure it for us so we can use cups or weight instead of counting out 365 heads.

Picked Dandelions today and I don't think it will happen. You need 365 flowers and just the yellow part, but the wilt before you can get them in the water to rinse them like the recipe says.

I think you have to pluck the green off as you pick them. I may try again and see how it goes, but will have to wait a few days as me and the GD picked all that were in the yard.
 
Couldn't you cut the recipe in half and then as you pick them, drop them into some cool water?


I will try again. There are tons of Dandelions out there again. You wouldn't know we picked them ALL yesterday. I will clean the green part off as I pick them and as you say put the petals into a ice water.

It's a two part recipe. Takes two day to make. I will type it in soon. Just taking a break. Rhubarb tubers to plant and raspberries too while the weather is good. I've got lots of chicks that just hatched too.
 
Loquats, loquats and more loquats! I have about 300 pounds on my tree and I've already canned 3 dozen jars of jam. This weekend I'll do jelly, chutney, and probably fruit leather. I'm also planning on making a couple of loaves of bread to freeze and perhaps a kuchen or two. Loquats started ripening on April 20th and they'll only be out another 3 weeks or so, max.
