What are you canning now?

I am very far from canning anything right now, but sure am enjoying all the stuff I put up in the summer and fall. Making plans to plant more of certain things for next year.
 
We've been using up all the blueberries, raspberries and strawberries I froze for jam in smoothies. This year I plan to buy buckets of blueberries. I don't care for them fresh but in smoothies they're good. The add a sweetness the strawberries don't.
 
"Easy" fix for the picky folks. Quit giving them the option. What is on the table is what is for dinner. Eat or go hungry. Complain enough and you get to do the cooking. Did the first one early with our kids. We'd try to make things they liked on occasion but we didn't let that dictate the menu. Meals were prepared, they either ate it or they didn't. If they didn't it was in Tupperware till the next meal and back to their plate it went. Yeah, they'll whine a lot at first (they are kids, they tend to do that) but eventually they'll figure out it does no good. They are the children, you are the adult. When they move out and pay their own way then they can eat what they want when they want.
Agreed! My kids comment that they don't like this, too bad, you eat what I cook. I never did the "make your kid a sandwich" because they didn't like what I made routine. IMO, it gives too much power to the kid. Plus, they have loved far more new recipes than they have not liked. So, it's a way to get them to try new things too.

Now the DH, that's a different tactic. He once complained that I never cooked him lamb. (I'm not fond of lamb) So for his birthday, I cooked a lamb roast for him. He didn't even realize it was lamb! Ticked me off big time that I went to all the trouble to search out how to cook it, etc, and he didn't even know it by taste! BTW, he hasn't had lamb since.

For the diced tomatoes, do I have to peel them? My canning book doesn`t have diced tomatoes. Only 50# of tomatoes, but food bank is getting majority ofthe rest. So I am ok with that, going to share 25# with another fellow canner who helped me when I needed it.
It doesn't work for diced, but if you puree it in your food processor/blender, you don't have to peel them.

Not really canning but...

After much success with and many batches of the homemade vanilla, vanilla liqueur, and fake Disaranno amaretto I'm going to be making a big batch of Kahlua coffee liqueur this weekend.

It's no small thing to be a mother that stays at home and shapes the world.
I have been a stay at home mom for almost 16 years now. (including bed rest for 3 months during pregnancy) I gave up my financial independence the day I gave my notice. (first day back to work after maternity leave) I was making good money, and if I had to go back to work now, I'd have to start over for sure. It was a decision my husband and I made together, as neither of us wanted someone else raising our children. I'm a very independent woman, so it was a difficult choice for me to be dependent on my husband. I recall telling him that I didn't EVER want to hear that it was his money.

All these years later, I'd do it again in a heartbeat. It has given me time with my children that I would have missed otherwise. It enabled me to homeschool my oldest for 6-8th grade because he wasn't happy in "regular" school. He is now in high school, a straight A student, in multiple activities, and loving every minute of it. My 2nd son has also benefitted from me being home. He is my helper, and loves to make cookies on his own. I have worked for my grandmother, doing the finances for her business and now her personal account due to she has dementia and cannot do this on her own. I do her grocery shopping and am able to visit her.

I'm far more busy with my kids, the house, chickens, bees, extended family, etc than I'd ever be in a traditional job. With my kids being older now, I'm primarily the taxi service.

The older they get, the busier I get. No wonder empty nest sydrome is so terrifying, suddenly you have nothing to do!

Starting another 5# batch of kraut in a 1 gallon pickle jar. In about 6 weeks I'll end up with about 2 quarts of fresh kraut to keep in the fridge to snack on at my pleasure.
I tried this and it molded on me. Not sure if I left it out too long, or what.
