As for size of hips, yup , they vary by variety. I look for the karge 1 inch rose hips from the rosa rugosa type.
No just everyone in general. Anyone can answer or comment anytime. You're just as important as the next person.

@rancher hicks I had extra apples that chunked up and canned in a light syrup with a touch of cinnamon and lemon juice. The apples are great in oatmeal and just as a snack. I drained them and used them in apple bread also, yummy!
Apples can be water bath canned - 25 minutes for quart size.

Here is the Apple Pie filling recipe that I got from this thread a couple of years ago. It is really good!
Apple Pie Filling

Ingredients:
1 quart sliced apples, peeled
2 tbsp tapioca (I put it in the blender and broke it down a little bit)
dash salt
1/2 tsp cinnamon
1/3 c brown sugar to taste
1 tbsp lemon juice

Directions:
Mix in this proportion and fill jars to 3/4" from top. Pack tightly.
Boiling water bath for 25 minutes. Let sit for 20 min before removing from water bath.

That sounds good wyoDreamer. And I like your ideas of ways to use it other than in pie.

About rose hips, I wanted to make jam because the shrub roses I have in the run have huge hips, but unlike the wild ones, they don't stay on the plant for the winter. So I took some and made jam! It tastes pleasant, not a strong taste at all. BUT rose hips are a huge source of natural vitamin C, so if I have some on toast every couple of days in this season....all to the good. The small ones are more usual, and people who use them don't collect them until after the first frost as the frost makes them a bit sweeter. You don't have to make them into jam, you can just pick them ant dry them and use them in tea. In colonial times rose hips were used to decorate...
A really nice thing about them is you dont have to rush to get to them at this busy season.
