What are you canning now?

I also had the same thing happen to one of my lids like what Catalina showes in her pic. The jar sealed but the lid was bent like that.
Last night I made a batch of the canned zuchinni bread. I would make more but I need more jars. Will be getting more later today.
I bought a bushel of tomatoes yesterday so I will be canning tomatoes today. I don't think I will be getting many from the garden as we have already had our first frost warnings yesterday and today.

Here is some of my Mock Pineapple. Wow this stuff is amazing!! It really does taste like Pineapple, yummy, and supposedly you can use it where ever it calls for crushed pineapple. Thanks jojo54!!. i guess you can also make Mock Applebutter from Zucchini. has any one ever done that?

Been having alot of trouble with the new silver ball lids this year, they are alot thinner than past years. Had 5 that did'nt seal or lost their seal out 4 boxes:(

I'm not having trouble with the jars sealing I'm having this problem

The jar is sealed, but I'm still storing it in my fridge until I eat it.
I had 2 out of one batch that did this.

It would be interesting to contact Ball or Kerr, enclose the picture and see what they say - if anything.

I love the "breads in the jar" and want to do a lot for Christmas. What are your opinions on doing double batches at one time. I'm thinking since I'm not trying to balance acid or pH that it shouldn't be a problem but wanted to know what you all think.

The recipe and variations are from the orginial Kerr's receipe. Do you think 'I could have trouble doubling those? What kind of problems do you think I might run into if I double?

I suppose if you are using a larger jar and putting more into it, it might change the dynamics.

When I double the bread recipes, I notice that the ones in the center (I place them on a cookie sheet), the ones in the center don't get as brown or finished looking as the outer ones. I've never split the racks though and cooked half on one rack and half on the other.

I would say that is from not leaving enough head space in the jar.

By the way, I am just finishing some peaches. They are in their hot water bath right now.
