What are you canning now?

Going to get jalapenos ready tonight for canning tomorrow. Found it is easier to do over a couple of nights rather then push myself after working all day. Plants are just about done and don't want these last few to go to waste. Garden is then pretty much done for this year. Still have plenty of frozen berries and peaches that need to get put up over the winter.

I put up some of Sandee's Apricot Jalapeno Jam, got rave reviews from my DH and oldest son before it even made it into the jars! It is not only delish, but a beautiful color with lovely little pepper flecks through out. (I opted NOT to use the food coloring and love how it looks.)

Tomorrow I am making the Apple Jalapeno Jam. This is my first time to use jalapeno's and I do wish someone would have told me to use latex gloves!!!! Any advice on how to keep my hands from stinging? I just know I am going to end up with this stuff in my eyes.

I am posting an SOS for the Banana Jam recipe. I thought it was from Scoop. I PM'd her, and haven't heard back. Can anyone help me out there?

When we butcher a cow or I find ground beef at a good deal..I can seasoned beef, I also can chunked beef and venison for stews..it is so convenient when "unexpected" things happen..I freeze a lot too but the canned is soooo handy!!

Yep, same here. I do at least 14 quarts of canned beef. It is quick to open a jar of beef. That is a FAST meal!! and still home cooked. I do a lot of stock too, for soups and beef-n-noodles, etc.
Today I'm doing more tomatoes.

Yep, same here. I do at least 14 quarts of canned beef. It is quick to open a jar of beef. That is a FAST meal!! and still home cooked. I do a lot of stock too, for soups and beef-n-noodles, etc.

How do you do your beef? Cook first then process? How long in the pressure canner?​
