What are you canning now?

Same as! I'm going to mix some this year... like a lavender and vanilla bean I want to do. I do love the clover alone, reminds me a mild honey.

I can't wait to start canning fresh goodies. I am tapping my trees this weekend to make some yummmmmyy maple syrup. Last year I put it up in pint jars and we just cracked open our last one last week. It's the first wild goodie we get to can up here in frigid NY.

I have almost five feet of snow still on the ground - but, the trees are tapped and ready for when the days get above freezing and the nights stay below. Sugaring is the first sign of spring (and snow fleas). My seedlings are started - I am so ready for spring!

I made yogurt for the first time this past weekend - I surprised myself how good it was.

Can you enlighten this westerner? What are snow fleas? I havent heard that term before.

HOW many of you are using a pressure cooker on a FLAT TOP STOVE ? ?

Which BRAND are you using ? ?

I have been reading the web sites and they WARN that many pressure cookers are not intended for use on flat top stoves. . . .

HOW many of you are using an ELECTRIC pressure cooker ? ?

What are your thoughts on electric pressure cookers ?

I have a 6 qt electric pressure cooker that I purchased from QVC and I absolutely love it!! I set the timer on it and walk away, very similar to the crock pot. We have used it for roasts, ribs, and some veggies. I used to have the one for the stove top and hands down the electric one is so much better for me.

Yep... I am completely going nutz for canning the veggies this year! My All American Pressure Canner was used for the first time (other then a test run) today to do the lavender jelly. I have 10 jars, and it went so quickly with the canner.

I do have all my veggie starts I needed to get going, going. I have something like 20 peppers and 25 tomatoes going now. Also a few zinnias.

I did pick up some squash seeds today I'm thinking of starting now too.

Anyways... I'm going up to the grocery store to get some clearance whole chickens so I can make some stock and can some chicken!!!!

I am not looking for perfect, but I don't want to buy something that is going to break my stove. . . . We are 15 miles one way from the nearest fast food place. We will starve if I break the stove trying to can green beans from the garden!

The presto 23qt has a flat bottom and works on flat-top stoves. Just remember that some pots are pressure cookers and some are pressure canners. You can use a pressure canner to do pressure cooking but if it doesn't say pressure "canner" in the title, you can only use it for cooking, and are not supposed to use it for canning.

Nice tip, I will keep that in mind. . .

So far the only brand that I have found that specifies a flat top stove as acceptable is the Presto.

How about Gauge versus the weights on top of the pot. Is the gauge worth the extra money ? Are the weights a pain to use ?
